Farro

Made a new salad last night and I am lucky no one else was into it here because I get to eat it for lunch now.  You may want to try it if you love grains.  Boil water and toss in 1.5 c of pearled farro, cook for 15 minutes or so.  Drain.  While it is cooking mix juice from a lemon, 1/2 a shallot, minced, 1 t. (or so) of Dijon mustard together and set aside.  When the farro cools a bit, whisk in 2 T of EVOO to the lemon mixture, Toss 2 T. of chopped parsley and dill into the farro.  Mix in 1/2 c. of sour cream and the lemon sauce.  Eat and enjoy!
